Port Lincoln - SA, Frozen (Loin)

Southern Bluefin Tuna (Thunnus Maccoyii) are wild caught in the Great Australian Bight before being towed back to the pristine waters of Port Lincoln very slowly. Southern Bluefin Tuna are wild caught and then held in large sea cages where they are fed their natural diet to enhance their taste and value. The Mori Tuna is “Friend of the Sea” certified as sustainable, a internationally renowned non-profit, non-governmental organisation (NGO), whose mission is to conserve the ocean’s marine habitat.

Southern Bluefin Tuna is harvested fresh between March to September and at this time gilled, gulled or headed whole tuna is available. Loin packs are available year round.

To use – treat the loin like ‘ice cream”, where you take out eh loin from the freezer, just before you are about to use it.

  • Put the loin in cold water, in your sink
  • leave to thaw for 15-20mins
  • Start to slice when the loins are still semi-frozen, so the colour of the tuna develops on the plate

*Please note – if you thaw overnight in the fridge, the loin will turn a brown colour and the meat will not be as high quality for sashimi.
