Steamed Flathead with Chilli and Sesame Dressing
Half fill a large wide-based saucepan or wok with water. Place on high heat and bring to the boil.
Meanwhile, in a mixing bowl, add the soy sauce, mirin, sesame oil, caster sugar, chilli and spring onion.
Into a steamer, place a shallow, heatproof bowl. Add half of the dressing and herbs to the bowl. Arrange the flathead fillets into the bowl, and top with the remaining dressing and herbs. Cover the steamer and place into the saucepan, ensuring the water does not reach the bowl. Cook for 6-8 minutes, or until cooked through. Serve with steamed rice or stir-fried Asian greens.
