Salt and Black Pepper Lobster

Ingredients
2 x Lobster whole, cleaned, cut in half length ways, with each half cut into 4 pieces
(16 pieces total)
3 tablespoons Chinese black pepper, finely crushed
1 tablespoon black peppercorns, finely crushed
2 tablespoons sea salt flakes
2 cups potato starch
8 x garlic cloves, finely chopped
2 x long green chillis, finely chopped
2 x cups vegetable oil
ΒΌ cup aioli

Salt and Black Pepper Lobster

Combine pepper in a pan over medium heat, toast until fragrant for 1 minute and 30 seconds. Place into a bowl with salt and mix. Add vegetable oil to a large wok and bring to a medium-high heat.

Add potato starch to a large bowl. Combine with prepared lobster and evenly coat on all sides. Once the oil is hot, fry pieces in batches until cooked and golden. Allow to drain on paper towel and set aside. Reserve oil.

Place wok back on stove and turn heat to medium-high. Add 5 tablespoons of reserved oil. Add garlic and chilli, constantly stirring until golden (2 minutes). Return fried lobster to the pan, season with salt and pepper mix. Serve with a side of aioli.
