One-pan Asian Rice with Steamed Flake and Greens

1 packet 200g Ferguson Australia Flake, thawed in the fridge overnight, cut into slices
1 tablespoon cooking oil
1 stick lemongrass, finely chopped
2cm piece of ginger, peeled and finely chopped
1 clove garlic, finely chopped
1 red chilli, finely chopped
½ cup basmati rice
1½ cups vegetable stock or water
1 tablespoon soy sauce
1 teaspoon caster sugar
Small handful snow peas, tops removed, halved
1 bunch bok choy, roughly chopped
½ bunch fresh coriander, optional

One-pan Asian Rice with Steamed Flake and Greens

Place a large saucepan over medium heat. Add the oil, lemongrass, ginger, garlic and chilli, and cook for 2 minutes. Add the rice, and cook for a further 2 minutes, whilst stirring. Add the vegetable stock, soy sauce and sugar. Cover the saucepan, turn the heat to very low, and cook for 10 minutes.

To the saucepan add the snow peas and bok choy, and mix through. Lay the flake slices on top of the rice, and cover. Cook for a further 10 minutes, without stirring, or until the flake and rice are cooked through. To serve, divide between two bowls and top with fresh coriander.
