Korean Style BBQ Lobster Tail

Ingredients
2 x Lobster whole, uncooked, tail removed, cut in ½ length ways with a steel skewer through tail
1 ½ tablespoon grapeseed oil
2 tablespoons flaked sea salt

Condiments:
½ head butter lettuce
½ head green corral
½ bunch large Parilla leaves
150g kimchi
150g pickled daikon
1x clove garlic, crushed
3 tablespoons sesame oil
1 tablespoon sesame seeds, toasted, crushed
3 tablespoons gochujang

Korean Style BBQ Lobster Tail

Prepare a coal grill, aiming to cook over a medium heat. Too hot will burn the lobster.

Arrange condiments. Place crushed garlic, toasted sesame seeds, sesame oil and pinch of salt into a small dish as an additional side.

Once grill has reached temperature, brush the lobster with grapeseed oil, sprinkle with salt, and place on the grill, shell side down for 4 minutes. Turn over to finish, flesh-side down for 1 minute.

Rest for 30 seconds, then serve.
