Healthy Garfish Lettuce Taco

Ingredients
2 packets x 200g Ferguson garfish fillets, thawed in the refrigerator overnight
½ teaspoon ground cumin
Salt
1 red capsicum, diced
2 tomatoes, diced
½ red onion, diced
1 avocado, diced
1 long red chilli, chopped
½ bunch coriander, chopped
Juice of 1 lime
1 tablespoon olive oil
12 large iceberg lettuce leaves
2 tablespoons yoghurt

Healthy Garfish Lettuce Taco

Preheat the oven to 180°C and line a baking tray with non-stick paper. Place the Ferguson garfish fillet on the tray, skin side down. Sprinkle with cumin and a pinch of salt. Place in the oven for 5 minutes, or until cooked through.

In a medium bowl, mix the capsicum, tomato, onion, avocado, chilli, coriander, lime juice, olive oil, and a pinch of salt.

Once the garfish is cooked, fill each lettuce leaf with one large spoonful of salsa, one garfish fillet, and a drizzle of yoghurt.

(Dietary specifications: Gluten Free. For Lactose free, leave out the yoghurt)
