Grilled half lobster with garlic & herb butter

Ingredients
2 x 200g Ferguson Australia raw lobster halves
80gm butter, softened
ΒΌ cup flat leaf parsley, finely chopped
3 cloves garlic, crushed
Zest of 1 lemon
2tbsp olive oil
2-4 slices ciabatta

Grilled half lobster with garlic & herb butter

Combine butter, parsley, garlic, and lemon zest in a bowl and season well with salt and pepper.

Heat a grill plate or BBQ over a high heat. Drizzle olive oil over the flesh of each lobster half and brush with pastry brush for even coverage. Drizzle bread with remaining olive oil.

Place lobster flesh side down on the grill for 4 minutes or until grill marks are seen on meat.

Turn each lobster half over so it is shell side down. Spread the lobster meat generously with garlic butter and cook for a further 6 minutes or until the meat has turned white and cooked through.

While the lobster is cooking place slices of bread on one end of the grill turn over after 2 minutes.

Remove bread and lobster from grill and place on a platter, squeeze with fresh lemon juice.
