Soi38 Lobster with mango salad

1x 200g Ferguson Australia raw lobster half / split

1 Tbsp crushed or grated palm sugar
2 Tbsp fish sauce
1 Tbsp lemon juice

2 cups of shredded green mango (or green apple)
1 Tbsp chopped mint
1 Tbsp chopped coriander
1 Tbsp sliced golden shallots
1 Tbsp chilli flakes (or to taste)

Soi38 Lobster with mango salad

Grill lobster on a hot grill plate, approximately 5 minutes, flesh side down. Turn the lobster over and grill for another 2-3 minutes or until cooked. You should aim for a slightly translucent colour.

Stir the dressing ingredients until the palm sugar has dissolved.

Combine the salad ingredients and mix with dressing.

Put grilled lobster on a serving plate and top with salad.

These vacuum-sealed lobster halves make cooking this delicacy at home all the more approachable; just place the product in the fridge overnight to thaw.
