Soi38 Grilled Lobster with salsa

1 x 200g Ferguson Australia raw lobster half / split

1 x tomato, diced
½ cup mint leaves, roughly chopped
½ cup coriander leaves, roughly chopped
1 Tbsp chopped large red chilli

50ml fish sauce
50 ml fresh lemon juice
½ tsp sugar

Soi38 Grilled Lobster with salsa

Grill lobster on a hot grill plate, approximately 5 minutes, flesh side down. Turn it over and grill for another 2-3 minutes or until cooked.

Combine all the salsa ingredients in a bowl.

Make the dressing by combining fish sauce, lemon juice and sugar.

Pour dressing onto the salsa ingredients and combine.

Serve salsa on top of lobster.
